    In Search Of.....

Vanilla ice cream recipe. Smooth, not overly sweet. One that has been tested in the new-fangled ice cream makers that do not use ice and rock salt, but instead have a bowl that has been in the freezer for 12-24 hr. Please include any possible substitutions (like how much pure vanilla if it calls for a vanilla bean or how to prepare the vanilla bean or WTF is Milnot and what can be substituted for it).

I want to make and perfect the basic, but always popular and good vanilla ice cream. I will then make additions to it.

Also, anyone with good sorbet recipes?

milnot--the (i think) borden brand variety of sweetened condensed milk. yes, you have to use this and not evaporated milk. yes, there is a big difference. yes, i learned that the hard way.

    good luck!
